Although not a big fan of desserts, this is one of my favourites made by the women in my family for decades. Easy to make and deliciously refreshing.
20 mins prep + 6 hrs freezer
- Small can pineapple slices- blended with little of the can juice
- 300ml stiffly whipped cream
- 400gr crushed digestive biscuits
- 150gr butter
- 150gr castor sugar
- 2 eggs
Sprinkle ¾ of crushed biscuits into base of 20 cm square tin and press down firmly. In large bowl, fold blended pineapple into stiffly whipped cream and place aside. In other bowl, cream together butter and sugar, then drop in eggs one by one. Spread mixture on top of crumbs, then spread fruit and cream mix, then sprinkle on rest of crumbs. Place in freezer until hard. Before serving, place in fridge for a couple of hours to soften slightly. Cut into squares, serve and prepare to be blown away by this easy, simple summer dessert!
